Sticky Toffee Pudding
Pudding Ingredients:
- 1 1/4 cup water
- 1 1/2 cups (6 oz) chopped pitted dates
- 1 teaspoon baking soda
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup butter
- 1 cup sugar
- 1 teaspoon vanilla
- 2 large eggs
Sauce Ingredients:
- 1 1/4 cups light brown sugar (packed)
- 1/2 cup whipping cream
- 1/4 cup butter
- 1 teaspoon brandy (optional, but reccomended)
- 1/2 teaspoon vanilla
- Whipped Cream or vanilla ice cream
Pudding Steps:
- Preheat oven to 350° F
- Butter and flour a medium size ceramic pudding (mixing) bowl
- Bring dates and water to a boil in a medium sauce pan.
- Remove from heat and stir in baking soda (mixture will foam). Set aside to cool.
- Whisk flour, baking powder and salt in a small bowl.
- In a large bowl, beat butter, sugar and vanilla. Add one egg and beat.
- Add half of flour mixture and half of date mixture and beat.
- Repeat with remaining egg, flour and date mixture.
- Pour into bowl.
- Bake 55-60 minutes until centre of pudding comes out clean.
- Cool in pan for 30 min. Turn out on serving plate.
Sauce Steps:
- Bring sugar, cream and butter to boil in small saucepan over medium heat, stirring constantly
- Continue to boil while stirring for 3 minutes.
- Remove from heat; stir in brandy and vanilla.
- Let stand. Rewarm gently before using.
